A Pirates Execution

So this cocktail was my second attempt at a Halloween themed drink. This one was built initially on the idea of changing the flavor profile of the initial drink into a more calm flavor profile.

Recipe

  • 1.5 Oz rum
  • 1 Oz passion fruit liquor
  • 0.5 Oz Cinnamon/Black pepper simple
  • 0.5 Oz Lime
  • 0.5 Oz Génépi
  • 1 Egg white

Shake with ice first, Shake without ice, Fine stain up, and then put three dots of Mole bitters on the foam.

So the reason you don’t dry shake (without ice) first is the froth that comes off the egg actually comes off better if you shake with ice first in this size of a build.

Génépi is the hardest ingredient to find. Its a spirit aging from the 1580s that executioners would give the people they were about to behead. Golden moon in Colorado created a spirit called Ex Gratia that is a recreation of it. It’s an exotic flavor of a blend of many different spices. The main flavor notes I can describe would be a nearly spicy toasted absinthe flavor. You can find other versions of it across the world but prioritizing ones with a green coloration will probably get you the correct flavor.
