1 Oz (30 ML) Gold rum
0.5 Oz (15 ML) Lime juice
0.5 Oz (15 ML) Honey Syrup
1.5 Oz (45 ML) Brut Champagne
Shake Rum, Lime, and Honey syrup and strain into an Ice filled highball glass. Top with the champagne. Garnish with a mint sprig or serve without a garnish.
The Air Mail is a pretty old cocktail without a true origin really known. It was mentioned as Early as the 30’s in a promotional pamphlet from Bacardi. In the 40’s the drink began to appear in plenty of classic cocktail books like W.C. Whitfield’s “Here’s How”, in David Embury’s 1948 “The Fine Art of Mixing Drinks”, and Esquire’s “Handbook for Hosts” in 1949.
So while the creator of the Air Mail has been lost to history the late 30s to 40s cocktail is still enjoyed to this day even though it’s overall popularity has…begun its descent.
